Super Bowl and Chocolate Eclair Cake

I know this is my kids favorite dessert so I made it for Super Bowl Sunday. Nick came up and I asked him if his mom made this dessert and he told me yes and it was his favorite too. So I am sending out the recipe. You can make it as healthy and fat free as you want. Faye once added fruit to it and it was yummy. So if you haven't made this one try it out...It is a favorite.


Chocolate Eclair Cake
2 large vanilla pudding boxes
Make for pie recipe.
Add a large tub of cool whip.
Mix well

Line a 9x13 pan with Graham crackers breaking them if needed to line bottom of pan. Add half the pudding mix and then layer crackers again. Add the rest of the pudding mix ending with one more layer of Graham crackers.

Frosting
(I double the frosting because its chocolate..)
the doubled version:
4 T cocoa
4t vanilla
6t Karo syrup
6 T butter melted
3 cups powdered sugar

Mix well and spread over crackers...Put in fridge for at least 4 hours or overnight...Yummy

  7. We call this Jordan's dessert. He would make it all the time and add his own special flare. I haven't tried it with icing before. Yummy!
